"This New Orleans restaurant leader of the culinary old guard is serving up tradition in a menu that benchmarks the Creole classics, many created here, such as succulent Oysters Bienville and Shrimp Arnaud, chilled boiled shrimp marinated in a homemade remoulade sauce. Most meals begin with air-puffed pommes souffle accompanied by delicious Bearnaise sauce. Another traditional old favorite often follows, Trout Meuniere, a crisply fried fillet of fresh speckled trout bathed in a velvety sauce of veal stock, lemon and butter and served with crunchy brabant potatoes. "Creole cooking, however, is an exuberant, living cuisine," emphasizes Archie Casbarian. "We continuously evolve as the Kitchen takes advantage of Louisiana's rich bounty of fresh seafood, shellfish, locally-grown produce and culinary talent." For example, Tommy DiGiovanni, Arnaud's native-born Executive Chef is fiercely dedicated to the fundamentals of his Creole heritage, always enlivening a menu bursting with seasonal flavors. At lunch, business, civic and political leaders sample new dishes offered daily. When the sun goes down Arnaud's turns social, as evidenced by photographs of guest celebrities and stars, presidents to princesses lining the corridor walls. In addition to the a la carte menu, an evening table d'hote in the Arnaud's Jazz Bistro is a five-course offering available for $39.50, featuring many of the restaurant's famous specialties. Arnaud's wine cellar is legend and quite possibly the city's best, with rare vintages toasting the proprietor's list which includes first growths of Chateau Lafitte Rothschild, Chateau Margeaux and Chateau d'Yquem among others. California wines are also given their due, with an extensive and impressive list available. Last year, live Dixieland jazz returned to Bourbon Street for dinner when the classically French Quarter-style Arnaud's Jazz Bistro was expanded at the corner of Bienville.Music is also on the menu for Sunday Brunch & Jazz, another local favorite. "
